Whole-Wheat Protein Pizza

Ingredients:
1 whole wheat pita
olive oil
balsamic vinegar
crushed red pepper flakes
1 can of pizza sauce
cottage cheese
fresh basil


Directions:
Preheat your oven to 350 degrees.  Pour a small amount of olive oil and balsamic vinegar into a bowl.  Take a brush and brush both sides of the pita.  Place into a pyrex and cook approximately 7 minutes per side, or until the pita hardens just a bit.

In a food processor, add any leftover mixture of the olive oil/balsamic vinegar, add 5 teaspoons of the pizza sauce, a few leaves of fresh basil, and blend.  Top this mixture onto the pita.  On top of this, spoon the cottage cheese over the sauce.  Drizzle just a tad of the sauce mixture on top of the cheese and then put the crushed red pepper flakes on it.  Put it back into the oven at 350 for another 10 to 15 minutes.  Serve hot!

mikep: Great pizza recipe! Thinking of trying it and maybe adding some fresh spinach to the mix! How about a healthy great pizza recipe with feta?

Peter Adonis: Jake, I'm glad that you enjoyed it. And as I said in the video, you can get creative and all types of different toppings, so long as you stick with the whole wheat pita and the cottage cheese.
