Swiss Chard/Lentil Soup - High Protein Vegan Meal

Ingredients:
4 cups of Low Sodium Vegetable Stock
4 cups of water
1 bag red lentil (16 oz)
7 baby carrots
2 stalks of celery
4 cloves of garlic
3 cups of chopped swiss chard

Turmeric
Paprika
Cumin
Black Pepper

Directions:
Chop all of the veggies.  In a large soup pot, saute onions, garlic, celery, carrots.  Add spices

Add veggie stock and water.  Add lentils and swiss chard.  Cook covered for 20 minutes.  If you prefer a smooth, silky soup, place in Healthmaster, and puree for 30 seconds.  If you like a hearty, thick texture, serve without pureeing in the healthmaster. 

*Optional - cook bulgur, quinoa or barley separately in a rice cooker and then add to the soup after pureeing in the healthmaster.  This will add more protein to it.
