Shrimp and Scallops

Ingredients:

1 lb of shrimp
2 lb of scallops
1 can of roasted red peppers
Heaping teaspoon of sundried tomato paste
Lemon Juice
Balsamic Vinegar
Olive Oil
Mrs. Dash No Sodium Seasonings
Lemon Pepper
Garlic
Black Pepper
Crushed Red Pepper

Directions:

Rinse shrimp and scallops in collander to get rid of sodium and preservatives.  Add juice

Empty can of roasted red peppers into food chopper.  Add sun dried tomato paste.  Add lemon juice, olive oil and balsamic vinegar.  Blend.  Mrs. Dash No Sodium seasonings, garlic, lemon pepper, black pepper, crushed red pepper.  Re-blend.

Add sauce in a large preheated saute pan - add shrimp and scallops.  Add more lemon pepper on top of shrimp and scallops.  Cover and cook for 15 minutes.  Enjoy!
