Leftover Lunch - Healthy Salad

This is a leftover meal that I devised to show you how easy it is to make a healthy lunch or dinner with leftovers.

Ingredients:
Leftover chicken or skirt steak
Romaine, Radicchio, Spinach
Sunflower Seeds
2 hard boiled eggs
2 tablespoons of hummus
Craisins

Olive Oil
Balsamic Vinegar
Lemon Juice

Black Pepper

Directions:

Mash the two hard boiled eggs - add the hummus - remash the eggs.  Add Black Pepper.

Add the lettuce into the bowl.  Add Craisins, sunflower seeds.

Reheat skirt steak or chicken in a saute pan for 3 to 5 mins.  Add to the Salad.

Add Olive Oil, Balsamic Vinegar, Lemon Juice.

Enjoy!
