Jazzed-Up Leftover Chicken - Caramelized Onions
Posted on Monday August 17, 2009 by Pete

Ingredients:
2 leftover pieces of grilled chicken breast
1 onion
Olive Oil
Balsamic Vinegar
Juice from 2 Lemons
Black Pepper
Honey

Directions:

Add balsamic vinegar, lemon, olive oil, honey, black pepper into a saute pan.  Add the chopped onions into the pan.  Saute until the liquid dissolves.  Once the liquid is almost gone, add a bit of water to prevent the onions from burning.  Repeat 2 or 3 times until the onions are ready.  Add the chicken, and cook for 2 to 3 minutes until chicken is heated up.  Serve hot!
