Home Made Tomato Sauce

Ingredients:
10 Basil Leaves
10 to 12 large tomatoes
A few heaping tablespoons of prechopped garlic
Olive Oil
Balsamic Vinegar
Black Pepper
Crushed Red Pepper Flakes

Directions:
In a large saute pan, combine olive oil, balsamic vinegar, basil leaves, crushed red pepper flakes, black pepper.  Cook for a few minutes until basil leaves soften.  Add garlic into the pan.

While this is going on, in a pyrex, coat the tomatoes with balsamic vinegar/olive oil - place in the oven on the broil setting.  Leave in there for 10 to 15 minutes, or until the skin blackens.  Take the tomatoes out, let them cool for a minute or two, and then remove the skins.  Chop up, and add to the saute pan.  Cook uncovered for 45 minutes or so on medium to medium high heat until the sauce thickens. 

Serve with pasta or use as a topping for chicken/fish.
