Healthy "PlayOff" Dip - Roasted Red Pepper/Sundried Tomato/Basil Dip
Posted on Thursday January 15, 2009 by Pete

So, with NFL playoff season in full swing, I wanted to do a dish that you could bring to a playoff/Superbowl party.  This is an easy recipe that you can complete in under 5 minutes.

Ingredients:
1 can of fire-roasted red peppers
1 can of sun dried tomatoes
Handful of fresh basil
Black Pepper

Directions:
Add peppers, sun dried tomatoes, basil and black pepper into a food chopper, and chop.  Chill, and serve cold.

If you have any leftover, you can use it as a marinade for chicken or steak.

Enjoy!

And by the way, Go Eagles!
