Ground Buffalo with olives, rice and black eyed peas
Posted on Tuesday March 24, 2009 by Pete

Ingredients:
1 lb of ground buffalo
4 small shallots
10 kalamata olives
1 small package of Uncle Ben's 90 second rice (Brown and Wild)
1 can of black eyed peas

black pepper
lemon pepper
balsamic vinegar

Directions:

In a large saute pan, spray with pam, add balsamic vinegar, pepper and lemon pepper.  Chop up shallots and olives, and add into saute pan.  Cook for 10 to 12 minutes or until shallots and olives soften.

Add the buffalo into the saute pan, cook until meat is done.

Add the black eyed peas and rice, cook for another 5 to 10 minutes, so that the flavors blend well together.  Serve hot!

HEAVEN: Good show. Excellent recipe and you did a wonderful job of presenting. The kitchen looks great with some colorful accessories. And those blue shorts made you look so huge, your body just looked tremendous. Strong colors make you stronger, as if you needed any help. You looked buff in blue.
