Buffalo Meatballs

Ingredients:
1 lb of ground buffalo
1/4 chopped sweet onion
1 package of fresh basil
1 can of roasted red pepper
1/4 package of portabella mushrooms
2 egg whites
4 garlic cloves
Wheat Germ
Mrs. Dash No Sodium Seasonings
Crushed Red Pepper, Black Pepper
7 oz tomato sauce

Directions:
Place 1 lb of ground buffalo in a large bowl, add wheat germ.

Add 7 oz of tomato sauce, roasted red pepper, fresh basil, garlic cloves, portabella mushrooms into food processor.  Puree. 

Add 3 oz (half) of pureed tomato sauce into the bowl with the buffalo.  Add the onion into the mixture.  Mix with a spoon.  Add the egg whites, mix with a spoon.  Add Mrs. Dash No Sodium Seasonings, Crushed Red Pepper and Black Pepper.  Add more wheat germ.  Mix with a spoon. 

Prehaut large saute pan, add the remaining 3 to 4 oz of pureed tomato sauce into the saute pan.


Make the meatballs, and add into the saute pan.  Cook for 30 minutes on medium.  Enjoy!

creampuff: Hi Pete You give great advice about avoiding crash diets -- research shows that most people who lose weight that fast will gain in back right away, and the yo-yo effect is very unhealthy. I can't wait to try this recipe!

Patient Perseverance: Hi Pete: Good recipe! It contains the major ingredients of any good Italian meatloaf (meatballs don't exist in Italy, but can be identical to meatloaf in everything but shape). For those who might not like the flavor of buffalo meat, they can get 95% lean ground beef, albeit at a higher price, and just substitute it. Cheers!

Solomon Gaddam: man i'm so glad that you came out with this recipe. i'm so sick of eating chicken breasts and broccholi. It's nice to switch up meats when u are leaning out. I'm sick of fish and beef also. thanks.

Timmy!: this one sounds REALLY good pete... is buffalo inexpensive? i think i would have to find some sort of specialty store cause i dont think i have seen it in my local supermarket,lol. one of these days i am gonan attempt one of your recipes.. tho judging by my chicken parm fiasco last night... lol!

Heaven: Clearly the best cooking video you have done. The first part was beautifully scripted and the dish was tastefully healthy. You looked awesome and seemed at the top of your game. The hints about your training made good sense and tips for photo shoots were very insightful. I learned alot about your craft from this one show and another way to add buffalo meat into my diet. Chef Peter you did it again.

artist: Hi Pete, thanks for that revival of your filmsy attire and the meat balls receipe..u are a real dish and u make really wonderful dishes...had the buffalo meat balls have been prepared by you in the buff...oh that would had been really delicious.....
